Coeliacs

Coeliacs suffer from a chronic sickness of the mucous membrane in the small intenstine and this makes the organism hypersensitive to gluten in food products.
This intolerance to gluten is suffered throughout the whole lifetime as this is incurable. Pacients affected by this illness must follow a stick diet where gluten must be excluded from the patients normal diet (so called gluten-free diet).
Amongst the most common sources of gluten are cereals (wheat, barley, rye, oats). These cereals are commonly replaced in a gluten-free diet by gluten-free cereals (amaranth, buckwheat, millet, rice, etc.).

Buckwheat
Buckwheat is easily digestible and has a low glycemic index (GI). It is also a natural source of rutine, which helps blood vessels to maintain their elasticity, increases the effect of Vitamin C and acts as an antioxidant.

Millet
Millet is another naturally gluten-free food that is produced using peeled grains.

Rice
Rice is used in a range of diets and is easily digestible.
